Porchetta is the roast pork popular in central Italy, often sold by street vendors outside shopping plazas, at festivals and in marketplaces.

Using the loin with the belly attached, it is rolled and stuffed with garlic, fennel seeds and other herbs.

The skin forms an amazing crackling all around the outside.
